BIG DIPPER FS-1 Flat Strainer separates & collects coarse solids such as rice, coleslaw and other food scraps larger than 0.125" (3.175 mm) in diameter found in point source drain flows. Designed to replace garbage disposals. Dewatered solids may be emptied into a trash receptacle. Stainless Steel Construction.
BIG DIPPER ESU-1 External Solids Strainer is an additional point source solids separator used in conjunction with Big Dipper W-200-IS & W-250-IS systems. Separates & collects coarse solids larger than 0.125" (3.175 mm) in diameter. Best utilized where codes require a separate solids strainer in front of point source grease removal units. Dewatered solids may be emptied into a trash receptacle. Stainless Steel Construction.
BIG DIPPER ILS-1 In-Line Strainer separates and collects coarse solids larger than 1" (25 mm) in diameter found in institutional-type kitchen flows. Comes supplied with adjustable 48" support legs for flexibility in installation. Couple with Big Dipper Central Grease Removal Units.
BIG DIPPER AP-6000-1 Series Alarm Probe provides an early warning that grease is building up either in the Big Dipper Unit (model AP-6000-1-TK) or in the DRUM-55 grease collector (model AP-6000-1-DR). Emits a loud warning tone when attention is required. Optional alarm probe with dry contact for warning light available.
BIG DIPPER CleanZone™ (CZONE-1) provides a sanitary shroud between Big Dipper Models W-200-IS & W-250-IS and the wall of the installation. Keeps refuse from falling behind the unit & allows easy mopping around the Big Dipper. Field-modifiable.
BIG DIPPER SFK Support Frame Series raises Big Dipper units off of the floor. It enables the customer to also use a larger 55-gallon drum grease collector in place of the GC-6 Grease Collector provided. Best used in conjunction with Big Dipper units installed in basement locations or mechanical rooms.
BIG DIPPER SA-1 Sump Adapter enables the owner to adapt Big Dipper systems (using the SH-3 Sump Hose) to use a grease collector other then the GC-6 provided with the unit. Used most commonly with a 55-gallon grease collector.
BIG DIPPER FSH Horizontal Flow Splitter divides a kitchen drain flow into two equal flows. Allows two smaller units to do the job of one large unit; for example, couple two 50 GPM W-500-IS Point Source Units in place of one 125 GPM W-1250-IS Centralized Grease Removal Unit to treat a 100 GPM kitchen flow. Designed to couple Big Dipper units in a side-by-side (horizontal) manner.
BIG DIPPER Additional Strainer Basket (Part# ST-17 for Big Dipper Models W-200-IS and W-250-IS, Part# ST-57 for Big Dipper Models W-350-IS and W-500-IS, Part# ST-97 for Big Dipper Models W-750-IS and W-1250-IS) allows the user to clean one strainer basket while the other is in use in the Big Dipper Unit.
BIG DIPPER VFCA Vented Flow Control module provides an option for use with installations where a significant amount of head pressure is present (greater than 6 ft./1.95 m) or where local codes require vented flow controls. A Vented Flow Control helps reduce problems associated with high head pressure and helps slow the drain water flow down. The VFCA kit contains an appropriate fitting and stainless steel flow control.
SIZING CHARTS
Different methods are in use today for sizing traps and interceptors. The sizing formula utilized by most codes can be incorrect if the facility contains a large number of fixtures. Some sizing methods can lead to calculations that make it appear as if enormous water flow rates are being generated. In reality this doesn't happen, because:
- the building's incoming water can’t produce such a high flow rate
- all the water fixtures can’t be in use at the same time
- the only fixtures that produce high rates of flow are those that "store and release" large volumes of water, such as deep multi-compartment sinks.
The main factor to be considered when sizing an automatic grease/oils removal unit is the “peak flow rate". A single fixture includes two or three compartment sinks. A single Big Dipper can easy handle these type of fixtures.

Lists common kitchen equipment and drainage requirements for a typical large full-service restaurant. Using the old multiple fixture unit values, the peak flow rate is calculated to be 240 gallons per minute. Using field experience data and the combined method, we find that the peak flow rate for this type of restaurant is actually only 48 gallons per minute. At 48 GPM maximum peak flow rate, a single 50 or 75 GPM Big Dipper can easily handle all the effluent discharges of this typical restaurant.
